Our wood-fired fish recipe is smothered in zesty compound butter & baked to flaky perfection. The crisp Meyer citrus gives the fish a sweet & tangy seasoning.

  • 4 Tablespoon salted butter, room temperature

  • 1/2 Meyer lemon, zested and juiced

  • 1 Clove garlic, minced

  • 1 Tablespoon fresh chopped herbs, such as tarragon, parsley, basil and/or chives

  • 2 Teaspoon Traeger Chicken Rub

  • 2 Pound cod fillets

    When ready to cook, set Traeger temperature to 450°F and preheat, lid closed for 15 minutes.
    Grill450 ˚F

    For the Compound Butter: Combine butter, lemon zest, lemon juice, garlic, herbs and Traeger Chicken Rub. Refrigerate if not using right away.
    Ingredients
    • 4 Tablespoon salted butter, room temperature

    • 1/2 Meyer lemon, zested and juiced

    • 1 Clove garlic, minced

    • 1 Tablespoon fresh chopped herbs, such as tarragon, parsley, basil and/or chives

    • 2 Teaspoon Traeger Chicken Rub

    Use a tablespoon of the butter to grease a heatproof baking dish. Arrange the cod fillets in a single layer in the baking dish.
    Ingredients
    • 2 Pound cod fillets

    Dot evenly with bits of the compound butter. Roast on the Traeger for 12 to 15 minutes, or until the fish is cooked through.

    Spoon butter sauce from the baking dish over each serving. Enjoy!
