What's this?

This isn’t your typical campsite classic. Our tinfoil dinners are packed with tender stew meat, potatoes, peppers, herbs & seasonings, then topped with a generous dollop of butter before getting sealed up and cooked over a Traeger wood fire.

Ingredients

  • 1 Pound stew meat

  • 1 Teaspoon fish sauce

  • 1 Tablespoon Worcestershire sauce

  • As Needed salt and pepper

  • 1 Tablespoon Traeger Veggie Rub

  • 1 Small red onion, chopped

  • 2 green bell pepper, chopped

  • 1 Clove garlic, minced

  • 2 Whole russet potatoes, peeled and cubed

  • 4 Sprig thyme

  • 8 Tablespoon butter, cut into cubes

Steps

  • 1

When ready to cook, set Traeger temperature to 350℉ and preheat, lid closed for 15 minutes.
  • 2

Place the stew meat in a medium bowl. Add the fish sauce and Worcestershire Sauce and mix well. Season with salt, pepper and Traeger Veggie Rub. Mix again to distribute evenly.
  • 3

Tear 4 pieces of foil and lay on a flat surface. Divide the potatoes evenly between the four sheets of foil then follow with onion, bell pepper, potato, garlic and the stew meat, then top off with thyme. Top each packet with 2 tablespoons of butter.
  • 4

Fold the foil up and wrap tightly.
  • 5

Place the packets on a sheet tray and transfer to the grill. Cook for 45 minutes to one hour or until potatoes are cooked through and stew meat is tender.
  • 6

Remove from the grill, open up the packet and top with fresh herbs if desired. Enjoy!
