Smoked duck is often a traditional Christmas dish, so give your festive feast the Traeger twist by wood-firing this delicious duck recipe.
4 (6 oz) boneless duck breasts
1/4 cup Traeger Big Game Rub
Using a sharp knife, score the skin of the duck so it has a 1/4-inch diamond pattern.
Season both sides of the duck with Traeger Big Game Rub.
When ready to cook, set temperature to High and preheat, lid closed for 15 minutes.
Place the duck breasts, skin side down, on the grate. Close the lid and cook for 15-20 minutes, or the internal temperature reaches 130-135℉ (for medium rare) when an instant read thermometer is inserted into the thickest part of the breast.
Remove from grill and allow to rest for 5 minutes. Slice against the grain and serve in thick slices. Enjoy!
