Roasted Cornish Game Stuffed Hens

No more fighting over the drumsticks. Everyone gets their own with this easy to make Roasted Cornish Hen recipe.

Ingredients

2 tbsp butter

1 pint WILD MUSHROOMS, CLEANED

1/2 YELLOW ONION, DICED

1 stalk celery, diced

1 CLOVE garlic, minced

1 cup WILD RICE

1 1/2 CUPS CHICKEN STOCK

2 SPRIGS THYME, LEAVES REMOVED

Salt & Pepper as needed

1/2 Tbsp FRESH SAGE, MINCED

4 CORNISH GAME HENS

1/4 cup TRAEGER FIN & FEATHER RUB

Preparation

Melt butter in a medium sauce pan and add wild mushrooms. Cook for 10 minutes until softened and lightly browned.

Add onion and celery and cook 5 minutes until translucent. Add garlic and cook 30 seconds more until fragrant.

Add rice and stock and bring to a simmer. Cook for about 20 minutes or until rice is tender. Add herbs and season with salt and pepper.

Stuff 1/4 to 1/2 cup of rice mixture into each bird truss the legs together. Season the exterior of the cornish game hens liberally with rub.

When ready to cook, set temperature to 375 and preheat, lid closed for 15 minutes.

Place the birds directly on the grill grate and cook for 30 minutes or until the internal temperature registers 165 with an instant read thermometer.

Remove from grill and let rest for a few minutes before serving. Enjoy!
